A salami with ancient origins, it dates back to the late Middle Ages, when fennel was used as a substitute for pepper, which was rarer and more expensive. Legend has it that finocchiona was widely used to accompany lesser Tuscan wines, thanks to its ability to leave the palate clean and satisfied.
