Start by hollowing out the rolls in the center, removing the soft inner part.
Crack an egg into each sandwich, season with salt and pepper, add a tablespoon of tomato sauce, grate the cheese so that it falls evenly over the egg, and finally sprinkle the cubetti pancetta on top.
Drizzle with a little oil.
Bake in a preheated oven at 200°C for about 15-20 minutes, or until the bread is golden brown and the egg is cooked. Remove from the oven and serve warm, sprinkled with a little fresh parsley.
