Preparation: 1. Blend the taralli in a food processor, then mix them with the melted butter. 2. Place two 8 cm diameter pastry rings on two small plates.
Pour in a layer of taralli crumbs and press down firmly. Leave to rest in the refrigerator for 15 minutes. 3. Finely chop the arugula with a knife.
In a large bowl, mix the cream cheese and arugula, then season with salt and pepper. 4. Pour the cream cheese mixture into the molds on top of the crispy taralli base. Level well.
Leave to rest in the refrigerator for an hour. 5. Use a knife to help remove the cheesecakes from the molds. Place them on two prosciutto crudo plates and decorate them with roses made by rolling prosciutto crudo strips of prosciutto crudo. Add a few rocket leaves and, if you like, a few drops of balsamic vinegar. 6. Serve immediately.
