Prepare the shank as indicated on the package, remove the liquid, and cut about half of it into strips.
Wash the cabbage and cut it into strips.
Wash the pear and cut it into cubetti.
Sprinkle with lime or lemon juice to prevent browning. Mix the yogurt with the mayonnaise and season with salt and pepper. In a large bowl, combine the cabbage, carrots, pear, and pork shank. Dress with the sauce, mix, and leave to marinate for a few hours before serving at room temperature.
