Method for making couscous: Rehydrate the couscous with twice its weight in hot water (this will take about 8 minutes) and drizzle with extra virgin olive oil. Then fluff it up with a fork until there are no more lumps.
Meanwhile, clean the bell pepper and cut it into strips, remove the ends and part of the skin from the zucchini so that it remains sweeter, then dice everything. Put the vegetables in a pan with a drizzle of extra virgin olive oil and sauté for about 5 minutes, softening them but keeping them crunchy.
Add the chicken cut into strips and continue cooking for another 5 minutes, adding salt to taste. Meanwhile, slice the onion into very thin rings and brown it in a pan.
At this point, add the couscous, peas, and chicken and vegetables to the pan with the onion so that they absorb the flavor. Take the Salamini and cut them into rounds. Now add them "raw."
