Savory crepes with arugula and bresaola

Ingredients:

  • 300 ml of milk
  • 40 g butter
  • 2 eggs
  • 250 g of 00 flour
  • Salt to taste

Preparation:

Method: First, prepare the crepes: break the eggs into a large bowl and mix with the milk. Sift the flour and add it a little at a time, stirring to avoid lumps forming.

Finally, add a pinch of salt and stir. Leave to rest in the refrigerator for about 30 minutes.

Heat the crepe pan and grease it with butter. Once it has reached the right temperature, pour in enough batter to cover the surface of the pan, cook for about 1 minute on each side, and repeat the process with the rest of the batter.

Add some buffalo mozzarella, 4 slices of bresaola, and a few leaves of arugula to each crepe. Fold into quarters and sprinkle the crepes with grated Parmesan cheese. Place them in a baking dish with a dash of oil and bake at 180 degrees for about 10 minutes in a convection oven.
