A few years ago, my passion for cooking led me to take several cooking classes, and one of the recipes that most captured my interest was for savory muffins. It's a basic dough that can be customized with any kind of ingredients and combinations.
Since I had some cooked ham available, I decided to use it with zucchini and grated pecorino cheese, for a rich taste and intense flavor. Savory muffins with cooked ham, zucchini, and pecorino cheese Wash the zucchini with cold water and remove the center part.
Cut the outer part into small pieces; heat 2 tablespoons of oil in a pan, add the zucchini, salt them, and cook them over low heat for 10 minutes, stirring often. Mix the flour, baking powder, and a pinch of salt in a bowl.
Melt the butter in a double boiler, pour it into a bowl, add the eggs, beat with a whisk or fork, and add the milk, stirring. Add the mixture to the flour mixture and stir until smooth and flowing, then stir in the zucchini, julienned cooked ham, and grated cheese. Place a muffin cup in each mold, fill with the mixture, and bake at 180°C for 20-25 minutes. Remove the muffins from the oven and serve. Enjoy!
