Accordion potatoes

Ingredients:

  • 4 potatoes weighing approximately 150 g each
  • 1 package of pancetta
  • 250 g mild provolone, Emmental, or cheddar cheese
  • 20 g Parmesan cheese
  • 50 g butter
  • Thyme to taste
  • Salt to taste
  • Q. b. Oil
  • Parsley, to taste
  • Pepper to taste

Preparation:

Today, a tasty and super fragrant dish: Accordion potatoes with pancetta cheese Procedure: To make the accordion potatoes with pancetta recipe, pancetta by rinsing the potatoes and drying them. Make closely spaced cuts of about 5 mm on one side of each potato without cutting all the way through.

(You can help yourself by holding the potato between the handles of two wooden spoons so that the knife cannot cut all the way through). Rinse under running water and dry the potato, then place it in a pan or baking dish that can hold it and go in the oven.

Spread with butter at room temperature, season the potatoes with salt and pepper, and bake at 170°C for about 1 hour. Once cooked, remove from the oven and insert half a slice of pancetta a piece of cheese into each cut made previously.
