Cut the radicchio into small pieces and sauté it over high heat with the oil for a few seconds, season with salt and deglaze with the wine. Remove the radicchio after a few minutes and reduce the wine.
Bake the pinsa for 5 minutes in a hot oven at 200°C. Spread the chopped mozzarella, radicchio, and reduced wine over the top. Bake again for 2-3 minutes. Finish with the prosciutto.
