Cut the zucchini into thin slices and pat dry with paper towels. Heat the oil in a deep frying pan and fry the zucchini a few at a time. Drain and dry on paper towels, then sprinkle with a little lemon juice, salt, and pepper.
Bake the pinsa in a hot oven at 250°C for 5-6 minutes.
Sprinkle with the zucchini, ham slices, and cheese cut with a large-holed grater.
