Recipe method: - Trim the zucchini and cut them into thin rounds. Transfer them to a pan with hot oil and cook for 3 minutes, then add the pancetta and sauté for another 10 minutes.
- Beat the eggs with the milk in a bowl. Add the sifted flour and baking powder and mix gently with a whisk to avoid lumps forming.
Add salt and pepper. - Add the zucchini and pancetta cooled, and finally the goat cheese, cut into small pieces.
- Pour into a loaf pan, previously buttered and floured, and bake at 180°C for 45-50 minutes.
