The I Gran Re Salame Piacentino uses selected Italian meat from the same certified PP breeders of Emilia Romagna and Lombardy as Coppa and Pancetta. As in the best tradition of the salami of Piacenza: the delicious aroma is the prelude to an inviting taste with the distinctive character given by a delicate garlicky note. The salami, as the coppa and the pancetta, is usually accompanied, in the tradition of Piacenza, by the
“Burtleina” or “Bortellina”. A sort of crepe, served warm, with the typical mix of flour, water, salt, lard, onion and eggs according to the version; the burtleina shows off at its best the aged pork of the area at the border between Emilia Romagna and Lombardy.
