The project I Gran Re was born of over 200 years of experience in the salami sector of the Beretta family. The line is articulated in proposals for the stall cut with noble origins and a high artisanal value, with the intent of selecting only the best from areas key to the Italian gastronomic tradition.
Protected Designation of Origin
The heart of ham is a lean and superior cut. From the nub of select pork haunches, it keeps rind and outside fat. The process is simile to the “sgambato” (pork leg): the fresh meats, de-boned, are salted and aged under controlled temperature and humidity for at least 7 months. After the drying stage, the heart of ham is lacquered or washed and vacuum-packed.
This results in sweet ruby-coloured slices, pleasantly fragrant.
