The Beretta tradition is born in the heart of the Val Trebbia that, together with the valleys of the Arda, Nure and Tidone, takes the name from the river that crosses it, marking the region of production of this noble PDO.
Protected Designation of Origin
In the version proposed in the I Gran Re line, the Pancetta Piacentina undergoes a seven-month long curing process, more than twice as long as the minimum 3 month period provided for in PDO regulations. The ingredients are “PP selected”, that is, only from certified abattoirs of Emilia Romagna and Lombardy. Every piece is salted with the “dry salt" method; the addition of crushed 1/4 grain black pepper, nutmeg and garlic, in a masterly mix, gives room to the patience of time and of Beretta curing experts. The Pancetta Piacentina I Gran Re goes through a final resting period in cellars whose exposed stone walls tell a story of pork butchering expertise and thousand-year old traditions. The aroma, sweet and delicate, but above all the absolute softness of the slices, makes tasting a unique and unforgettable experience.
