The Beretta experience in the salami sector devotes to its Parma Ham 20 months [for] the de-boned semi-sfilato. Only the best Italian meats from the Parma Ham chain, selected for the long curing process, together with artisanal brining and processing result in the Natural De-boned.
For a minor stress of the meats and a higher yield when slicing.
Only in this way the 20 months deboned ham can preserve all its organoleptic properties.
